Slow cooked beef with chipotle pepper marinadebyzakhar - 3-3.5lb of beef chuck
- 3 chipotle peppers (from can)
- 2 tbsp of adobe sauce (from same can)
- 2 tbsp apple cider vinegar
- juice from 2 limes
- 1/2 a red onion
- 6-8 cloves of garlic
- 1 tbsp dried oregano
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 2 tsp chili powder
- 1/2 cup of beef broth
- 2 tsp salt
- 2 bay leaves
Add everything except beef and bay leaves to a blender and puree until smooth.
Cut beef into large pieces and add to crock pot. Cover with marinade and toss in the bay leaves.
Cook for 10-12hrs on low, shred, and enjoy.
