Coriander Green Lentilsbyzakhar - 2 Tbsp olive oil
- 1/2 a large yellow onion, diced
- 2 cloves garlic, minced
- 1/4 cup coriander, chopped
- 4 cups stock + 1/2 cup water
- 2 Tbsp tomato paste
- 2 cups green lentils
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1 tsp paprika
- salt and pepper to taste
Sauté the onions, garlic, and coriander in the olive oil in a large pot for 5 min or so on medium heat.
Add the rest of the ingredients and cook on high for another few min.
Lower the heat to a simmer, cover, and cook for 45 min, stirring occasionally.
Original recipe called for passata, but swapped out for tomato paste based on what I have at the local groceries out here.
That recipe also called it a soup or a stew, but I tend to cook them a little drier.
A hearty lentil dish, simply good on its own or even better as a topping in a bowl or a wrap.
